This vegetarian corner cafe in NYC’s Chinatown serves coffee, pastries, and breakfast foods. I got the egg & cheese on brioche, with tempeh and avocado. 

The sandwich as a whole was great but the brioche may be improved. It was dry, had a weak papery aftertaste, and was compressible but bounced back quickly to touch. Air pockets were dense. Notably, it did not have the butter nor the smooth tearing that most brioche breads have but instead had a semi-crumbly texture. This bun is neither salty nor sweet, and is like the blander cousin of a pre-packaged hamburger bun.

I think there could be more butter/milk fats to create a fluffier texture. Some salt would be useful for flavor.
