This is an outpost of a Swedish bakery classic in the heart of NYC’s Meatpacking District. We tried the famous cinnamon bun.
It had a fluffy texture throughout, both interior and exterior were springy. Bounced back immediately to touch. Soft crust, slightly moist because of the melted butter & sugar. Interior had dense crumb, fine grain, even structure, moist, and slightly sticky. Crystallized rock sugar sprinkled on top gave the entire bun a slight crunch. The taste was surprisingly subtle, unlike a regular cinnamon bun. In fact it tasted more like syrup & butter with a hint of cinnamon in the aftertaste – giving it a unique flavour profile. The exterior was golden brown, interior was beige/white. A few scattered sesame seeds (?) baked into the bread as well, but these didn’t serve a purpose other than visual.
Franky liked this bread more than me but my personal preference would be a drier, harder crust with the moisture contained in the interior.
