3807 Iseltwald, Switzerland


This small family-run restaurant operates out of a home kitchen and patio in the lakeside village of Iseltwald in the Interlaken region. Both Franky & I thought this food was the best we had in Switzerland – and it was incredibly good value too. 


What surprised me the most about this restaurant was the bread. Behind a deceptively plain exterior the flavor was complex and refined. It was a dark brown wheat bun and had a semi-sweet taste. Interior texture was pillowy and soft, mild yeast/wheat aroma. Just the right elasticity and moisture. Crust texture was crisp and chewy, toasted/wheat aroma. Density was on the lower end with large air bubbles and even structure. 


We ate a lot of bread this vacation but I think if I had only one opportunity to try the bread in Switzerland, I would have it here.
